This durum wheat semolina pasta is made with selected durum wheats grown on the hills of the Marche region of Italy within “La Campofilone” chain. The blend of wheats harvested in summer is aged at controlled temperature: this ancient expedient allows us to obtain a very high protein and more digestible end product. To keep unchanged the nutritional values of this precious raw material, the entire production process - from the mixing with water to the bronze wire-drawing, from the rolling to the drying - takes place at low temperature for at least 20-36 hours.
